Beetroot Pickle // Kerala Style Beetroot Achar In Malayalam

Ingredients 

Dates -20
Beetroot-1 small
Carrot - 1/2
Green chilli-6
Garlic-2pods
Ginger -small 
Salt-
Tuermeric Powder-1/4tsp
Chilli Powder- 1tsp
Vinegar - less than 1/2 cup
Sesame oil or coconut oil-4tbsp
Fenugreek powder-1/4tsp
Asafoetida powder- 1/4tsp

Method 

Wash deseed and soak dates in 1 cup of hot water for 1 hour .Then mash well,keep side 
Grate beetroot and carrot .keep aside 
Heat oil ,add garlic ,ginger ,green chilli and salt.
Saute for 2 minutes in medium heat .
Now add all powders and saute .
Now add dates and cook ..
Now add beetroot carrot and mix well ..
Finally add vinegar and cook for another 5 minutes .check and adjust the taste 
so the tasty biriyani pickle is ready to serve
